Taco Tuesday's - with a twist




 
My husband & I love Taco's (& fajitas, burritos, enchilada's... )They are part of our once-a-week, easy,  throw-together-meal-nights, regularly making an appearance on our dinner table at home. So you can imagine our shock, when Ebony didn't share the same enthusiasm, when she finally joined us in our taco Tuesday night! She took one look at the freshly prepared meal in front of her with a look that pretty much read "What do you call this then?" Sadly no, this look didn't convey Darryl Kerrigan's enthusiasm (from the movie The Castle) when he asked the same question about his wife's rissoles. No this was a "What do you call this then, I'm not going any where near it" look. However, Since learning not to give up that easily, I begrudgingly mixed up a classic & stir fried all of the ingredients (onion, garlic, tomato, baby spinach, grated carrot, cheese, red cabbage & red kidney beans) for her meal, with the mince, instead of having them as 'sides' for her taco's.
 
Bingo, she loved it! Crisis averted, we can continue having taco Tuesday night at our house.
